Buttermilk Biscuits

Handle these as little as possible to keep them tender and light.

2 1/4 cups all-purpose, unbleached flour
1 t salt
1 T baking powder
1 t baking soda
6 T cold butter, cut into 10 pieces
1 cup buttermilk, well shaken

Preheat oven to 450°.

Combine dry ingredients in a food processor and pulse lightly to combine. Sprinkle butter over the dry ingredients and pulse until thoroughly combined. Transfer mixture to a bowl. Add buttermilk and stir until mixture just forms a ball. Turn onto lightly floured surface and knead a few times (do not over knead), dough will feel slightly sticky. Press dough into a 3/4-inch thick rectangle and cut into 2-inch rounds. Place on an ungreased baking sheet and bake 7 to 9 minutes, or until biscuits are golden brown. Serve immediately.
