Delicate buttery cookies with a piece of chocolate hidden in the middle. Makes about 3-1/2 dozen cookies.
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 t pure vanilla extract
2 1/4 cups flour
1/2 cup finely chopped nuts
1/4 t salt
4 oz. good quality chocolate, cut into 1/2-inch pieces
powdered sugar
Heat oven to 400°F. Mix butter, powdered sugar and vanilla in a large bowl and stir until smooth. Stir in flour, nuts and salt until dough holds together. Enclose chocolate around dough to form 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake 10-12 minutes or until set, but not brown.
Roll in powdered sugar while warm; cool completely. Roll again in powdered sugar just before serving.
